A unique wine from top Greek producer, Gaia. The Assyrtiko grapes are dried in the heat of the Santorini Autumn to shrivel and raisin, concentrating the flavours and intensity. The wine is slowly fermented in barrel and left to age in the same wood for over 10 years to give a luscious and intense naturally sweet wine. Complex aromas and flavours of caramelised fruits and raisins are married to dried fig, coffee and bergamot before an impressively long finish. The sweetness is never cloying, as it is balanced by the naturally refreshing acidity of the grape variety. A deeply complex wine that will age gracefully for many years.
