Les Caillottes, the vineyard in which these Sauvignon Blanc grapes are grown, is pebbly with chalky subsoils - in fact, "les caillottes" means "the pebbles" in French! Organically farmed, it's a classically complex Sancerre and the mineral-rich terroir is reflected in the wine, which is dry with a lovely distinct mineral note.
